Pinwheel Appetizers

 


 

 

3cups cooked wild rice

1 8-oz package fat free cream cheese

1/3 cp grated Parmesan cheese

1 tsp+ parsley flakes

1/2 tsp garlic powder or garlic -black pepper mix

1/2 tsp Dijon mustard

2-3 drops hot pepper sauce /dried hot pepper to taste

3 12-inch soft flour tortillas

3 oz turkey or beef pastrami

Fresh spinach leaves, washed and dried

Combine rice, cheeses, mustard and spices in a large bowl.  Mix well.

Spread the mixture evenly over the tortillas, leaving a borer around he outer edge.

Place a single layer of pastrami over the mixture.

Cover the meat with a single layer of spinach leaves.

Roll each tortilla tightly, wetting the border edge with water o help seal the roll.  Fasten with toothpicks and place seam side down in a refrigerator container.  Cover tightly and chill overnight.  Cut into 11-insh slices, discarding uneven ends and serve.
